How To Make Chocolate-Covered Cherries

These delicious Chocolate-Covered Cherries make great gifts for any occasion… Valentine’s Day, Mother’s Day, Father’s Day, Christmas, Teacher’s Gifts, Graduation, Weddings, Showers, Birthdays, Get Well Gifts, Grandma, Grand dad, Hanukkah, Easter, Cocktails etc. Get the whole family involved! They are so easy to make.

INGREDIENTS

– 450g of powdered sugar (1 pound or 3 1/2 cups packed) + 1 cup extra in case you need more)
– 1/2 cup light corn syrup
– 1/2 cup soft unsalted butter (1 stick)
– 1 teaspoon of vanilla extract
– 2 jars of cocktail cherries (approximately 100 cherries)
– 12oz (340g) of semi sweet chocolate chips (I had to use an extra package, so be prepared in case you need more)
INSTRUCTIONS
Mix the sugar, syrup, butter and vanilla with a fork or mixer until you get a play dough consistency.

Drain and pat dry all your cherries with a paper towel.

Cover the cherries with the sugar fondant.

Place the cherries on a wax sheet of paper and let cool in the refrigerator until firm.

Melt the chocolate chips in a microwave safe bowl on medium a setting (or defrost setting) and mix every 30 seconds until fully melted. You can also use a double boiler to melt the chocolate chips.

Remove the chilled fondant covered cherries from the refrigerator and dip them one at a time in the melted chocolate.

Place them on wax paper on top of a cookie sheet and let cool in the refrigerator for approximately 30 minutes or until firm.
