Sweet Potato Hummus
Ingredients
- 1 pound sweet potato, peeled and cubed
- ½ tablespoon Wildtree Garlic Galore Seasoning Blend
- 1 (14.5 ounce) chickpeas, drained and rinsed
- 2 tablespoons tahini 4 tablespoons water
- 4 (6-inch) whole wheat pita, cut into chips
- ½ tablespoon Wildtree Natural Grapeseed Oil
- 1 ½ teaspoon Wildtree Fajita Seasoning
Instructions
- Add sweet potato to a saucepan and cover with water. Bring to a boil and cook about 15 minutes or until tender. Drain and transfer to a food processor. Add the Garlic Galore Seasoning Blend, chickpeas, tahini and water; puree until completely smooth adding more water to adjust thickness if necessary. Season with salt and pepper if desired. Store hummus in an airtight container in the fridge. Preheat oven to 350°F. Spread cut pita in a single layer on a sheet pan. Brush with Natural Grapeseed Oil and season with Fajita Seasoning. Bake for about 10 minutes or until crisp. Serve with prepared hummus.
