Tia Rosa's Fried Rice
Serves: 6
  1. Heat Roasted Garlic Grapeseed Oil in a 12-inch nonstick skillet over medium heat. Sauté brown rice and Tia Rosa's Enchilada Sauce together for 5 minutes until rice is lightly crispy. Add black beans and frozen corn and cook for 2-3 minutes until corn is warmed through. Remove skillet from heat and stir in zucchini. Garnish with cilantro and a squeeze of lime juice.
