Tia Rosa's Fried Rice

Ingredients
- 2 teaspoons Wildtree Roasted Garlic Grapeseed Oil
- ¾ cup dry instant brown rice, prepared according to package directions
- 1/4 cup Wildtree Tia Rosa's Enchilada Sauce
- 1 (15.5 ounce) low sodium black beans, drained and rinsed
- ¼ cup frozen corn
- 1 zucchini, halved, seeds removed and shredded
- 2 tablespoons chopped cilantro
- ½ lime
Instructions
- Heat Roasted Garlic Grapeseed Oil in a 12-inch nonstick skillet over medium heat. Sauté brown rice and Tia Rosa's Enchilada Sauce together for 5 minutes until rice is lightly crispy. Add black beans and frozen corn and cook for 2-3 minutes until corn is warmed through. Remove skillet from heat and stir in zucchini. Garnish with cilantro and a squeeze of lime juice.
